    Thank you for this. Last Feb I was diagnosed as a type 2 diabetic. The American Diabetes Association now recommends the Mediterranean diet. With that and the help of many keto principles that I have learned from their community I have lowered my A1C and lost 60lbs. I will soon be off all medications. I really wish others would take this information you put out there seriously, it can literally save lives.

    I was stationed in the Mediterranean three times during my military career. Was in great health and in shape and the shape wasn’t round. It was well, made a Speedo look good on the beaches of Italy. 😎

  14. We use to have to pick dandelion greens by the basket when I was a kid. My mom would can them. Made great dandelion wine as well.

    I *love* dandelion. I used to pick it from my yard and eat it (just the leaves when I would feed my iguana as well) but I can’t anymore because of dogs.
    I would love to have whole pimento stuffed olives wrapped in hummus-lined dandelion leaves. Sounds so good xD

    Everything is relative. So chickpeas might help a regular person shift to a lower carb calorie profile, but go in the wrong direction for other people who need a stricter diet to maintain a good weight. .. If you loose the relative perspective, you may be offering bad advice to some people, while it might be true for others.

  23. Thank you Thomas!, because of you I cut sugar and gluten from my diet, and eat mostly Mediterranean, Indian and Thai without the pita, naan and noodles, and I feel so much better!! Now I just need to get off my ass and exercise!😜

  24. Love a lot of meditteranean foods. I am not a fan of their cheeses though, because they are very low in vitamin K2. I prefer Dutch cheeses

    You have to be careful which olive oil you purchase as well. There are so many olive oil brands at stores and a lot of them are fake. There have been studies where more than 70% of olive oils at stores are diluted in soybean and other chemicals. Make sure you buy quality oil πŸ™‚.

    For garlic I use a mortem or muddler to mush the garlic to a paste in my salad bowl prior to making my vinegrette. Usually olive oil and lemon. With Italian herbs.

    I find it so frustrating that so many mainstream versions of the ‘mediterranean diet’ state that it includes little meat, dairy (cheese and yoghurt), and lots of grain. You only have to look up the staple food for these countries to see that the real Mediterranean diet actually includes lots of fish, lamb, pork, cheese with lots of veg along with proper olive oil!

    I went to Greece last year. I have to say the biggest food discovery was: whole olives. The one with stones tastes so much BETTER! Crazy thing that I was always buying pitted ones.
