I think important to point out is who the F eats a cup of artichoke! 😀 I love to boi my artichokes and eat them with a vinagrette dip I make at home, no sugar, with ol. oil, good salt, pepper, any vinegar, though I prefer or this, red or balsamic v., even if I eat the meaty part of the leafs (so much work! meaning, I spend some calories to eat artichoke), and the heart, we’re still only eating 1/4-1/3 of a cup of artichoke, so honestly people .. even if you roast it ‘a la italiana’ with some garlic, onions, tomato, oregano or provence herbs in the oven and eat 2, even 3, you won’t be having more than that! I think artichokes should be removed from the "bad’ list .. 😀 lol – I wouldn’t remove peas from the ‘bad’ list, but again, if I put some peas in a ‘frango a caçadora’ (hunter’s or stewed chicken with carrots & peas), come on, I"m only eating 1/3-1/2 cup of peas .. it’s really not the end of the world! You forgot carrots, but I think that a bit carrots won’t hurt and will benefit … especially raw … Squash, great replacement for pasta as you point out … so I’d have a 4th column perhaps … but I’m just … it doesn’t matter … Pumkin culd be a good material for cakes without breaking the diet if one eats a small piece in replacement for something else … I do that … I’ve a glass of red wine in replacement of berries or something else (once in a while) …
If Corn where not GMO, Like the original cornseeds planted and harvested as NON-GMO Corn, Would it be any better? Does it still exist? (Seedbanks maybe?)
Cucumber are a fruit…… Just had to be that guy sorry, but I eat them like candy bars when I am losing weight. Like 3 or 4 a day. I have a bit of a sensitive GI system so I tend to pick what works for me and stick with it because my stomach gets used to it. A lot of chicken, fish, beef, pork, cheese, eggs, non processed jerky, non processed butter, cold pressed unrefined oils, cucumbers/pickles, cauliflower, lettuce basically make up 99% of my diet. I do not take any supplements and only drink black coffee and water. Outside of that I will have straight vodka on the rocks or with a bit of club soda on the weekends and very rarely a diet drink. I have a “junk day” once a month. That is literally anything goes. It works out well because I use it on stuff like holidays etc. That way it keeps me from the typical American mentality of “Oh it’s the holiday season”. Often meaning anything goes from Halloween to January 2. If I am losing weight I just let the junk days be. If I am at maintenance then I usually cut my calories back by about 500 the week leading up to the holiday. I also give myself the wonderful birthday gift of taking 10 calories away from my daily intake. Sadly that’s just how it works, but 10 calories a day is a good mindset. That way you don’t need to lower it by 100 10 years later and have gained 10 lbs.

I was wondering about the squash listed under "less than 3 carbs". Is that yellow crookneck, or does it fall into the diverse family of winter squashes like spaghetti, acorn, and butternut squash? Keep up the good work, and thank you!

It would be really good if you re-did this clip as insulin friendly low spiking vegetables and high spiking unfriendly. Also be good if you did it with fruit as well . Best fruit that is low spiking insulin friendly and high spiking unfriendly fruits.
I don’t think I eat more than 50 gr per day of carbs but why I gain weight a little bit doc? I noticed when I eat roasted peanuts (only 25 gr)..last time even only 10 pcs 😥😥😥 I am already 59,..and become 60,… For vegetable.. mostly I eat cucumber.. tomato..and I am doing omad..
