Whole plant food diet. People need a lot of starch and fiber, cooked and not cooked. That is the best for health and for environment and no animal suffering is needed. Best microbiome can be maintained and gained with whole food plant diiet.
Duh! You would also need to control the contents of the foods people are consuming. White breads, chocolates, etc. are not all equal. Low sugar dark chocolate is far different than a high-sugar milk chocolate.

As a house’s facade wouldn’t say much about it’s foundation or that it may have been built on soft soil, similarly using glucose level wouldn’t say much about a person’s overall health. It is well documented that health is a system comprised of lifestyle, meaningful work, social ties, general outlook on life, diet, etc. Using glucose measurement to assess one’s health is as effective as using temperature or heart rate as an indicator of well being. Instead of measuring these one off factors, health should be assessed as a system that combines multiple factors. It would be wise for this kind of research to include individuals who are known to be healthy. It is now well known that folks living in the Blue Zones are healthy, happy and live the longest. What we are really looking for is a robust formula for health, not just a diet.

Different responses to foods can be caused by Hormonal status. women get low sugar spikes during their cycles, menopause causes insulin resistance, for men, low Testosterone affects sugar metabolism, so does low thyroid. when I started taking thyroid and bhrt hormones, ALL my troubles with sugar and diet and metabolism disappeared. I eat anything I want. before, I could only eat meat and greens. now I can eat candy, pasta, white bread, and everything. but I still prefer meat and veg Lol!

For instance using the BMI chart determining who is overweight and other little "fact" creators he uses as the underlying foundation of his speech.

I would need more information. We cannot conclude a diet with ice cream is the good one, how much? How often? What time? How combined? What else was in the diet? What were the parameters of the subject? She? Gender? Activity levels? General health? Any particular considerations illnesses? It just sounds to me as another attempt to divert from good nutrition, throwing in a good sentences to pretend we are now showing you the right path. I trust my gut only. Thanks.
